Title: Question About Cooking a Brisket

Hi,

I would like to smoke a brisket this weekend. I have looked over many of the recipes here and on the recipe site and most of them suggest smoking then transferring the brisket to the oven to cook. My apartment gets way too hot in the summertime to keep the oven running for hours. I was wondering if any of you have tips for doing the entire cook in the Bradley. Is this recommended? Should I boat the brisket after it has smoked? Is it safe to let it cook overnight?

I would smoke it, then put it in a covered foil pan or wrap it in foil for the rest of the cook.

I use my OBS overnight, I do get up and empty / refill the water bowl every 4 hours or so.

I also cook my brisket form start to finish in the Bradley

Basically just like FLB does

When your done dont through away the juices in the pan they make great gravy just put the pan in the fridge for a wile to let the fat firm up and scrape it off the make the best gravy you ever had
