Title: Curing.....using an egg to measure brine strength.

I had always thought an egg floating in brine represented approx 80 deg brine mix until I came across this info today. We live and learn!  :)

Very cool info Manx.  I would have though that an egg in any way shape or form of breaking the surface was the 80 deg mark but not so.

That's exactly what I thought .......... being a scientist it also intrigued me that someone actually went to the trouble of designing and performing an experiment to disprove what was just perhaps an old wives tale.  :)

That was an interesting experiment. I learned much from the whole thing

I always used the "floating egg" to mix my brine. Looks as though I've been around 40° to 45°.
