Title: CT Pork butt

Thanks to NePa and Carolina Treet. I did up a little pork butt this weekend. I rubbed it down with the CT and let it sit in the fridge a couple days

Ready for the weekend got it out and gave it another coat of the CT through in the smoker preheated to 280 F after the butt when in i turned the smoker down to 220 F and gave it 4 hr Pecan then sat down to have a cold one or two

After the smoke i poured a beer in a foil roasting pan then placed it on the rack under the butt and went to bed

In the morning i stabbed in the temp probe and the IT was at 180 F, when the IT hit 190 F i pulled it out and let cool on the counter for an hr

After the rest on the counter i pulled and had a sammie that CT gave it a nice twist, forgot get a picture of the grub, i always do that

Turned out pretty dam good, nice and moist and tender

Looks might good. All this this talk about CT I'm thinking I have to find a source for some.

Carolina Treet is not available in my area in Northern Cal. Nepa got me hooked on the stuff as a sauce and a marinade. I buy case lots here.
