Title: Prauge #1 question

Are Prauge#1, Morton Tender quick and instacure#1 allt basically the same? IE: 6.25% nitrite?

Prague #1 and instacure #1 are the same.

Mortons has sugar in it as well, I believe.

Prague #1  Instacure #1 and pink salt #1 are all the same they have 1 oz sodium nitrite to 1 lb salt

Morton Tender Quick has both sodium nitrite and sodium nitrate along with salt sugar and some anticakeing agent

Cure #1 and Tender Quick are NOT interchangeable

Correct me if I'm wrong, but I believe the concentration of nitrate/nitrite is far less, .5% of each (If I recall correctly).

Probably what OU812 was referring to when he said they weren't interchangeable...

Excellent link Hab,
MTQ is VERY weak compared the concentrated cures mentioned.  I have some prague #1 somewhere in the house (expired by now) but what I bought was a baby bag, maybe a 100 grams.  Needs to be utilized in large mixtures of sausage, that I cant do here in the city, but would use back home on the farm in a 50lb batch.
