Hi dannyd, can't really help very much I am afraid as I have never made jerky and know little about making it ....... other than to try this website:

http://www.sausagemaking.org/acatalog/Cures.html

This refers to making jerky. They have a UK based forum where you could post your question about dehydrators etc ..... I am not a member of the forum myself although I do use it occasionally to look up recipes like making black pudding and haggis.

There are several suppliers of dehydrators in the UK, this one advertises itself as suitable for jerky for instance:

http://www.amazon.co.uk/Stockli-Dehydrator-With-Timer/dp/B000LR0GTC/ref=sr_1_1?ie=UTF8&s=kitchen&qid=1251704527&sr=8-1

Maybe give you something to go on and one of the resident experts from the other side of the pond can tell you how suitable such dehydrators actually are and or the best design to go for!  :)

This company are also very helpful and may be able to give advice if you contact them:
