I did 30 pounds of brisket this weekend for a co-worker of my daughter, they were having a party this past weekend.  Well I just a call from her, and apparently the briskets were a big hit and people were wanting to get my card and know what my prices are!  Well herein lies the problem, I don't have a clue as to what to charge anyone....any ideas here??

the rule of thumb here is to calculate your basic cost and then divide that by o.35 to come up a decent profit. So suppose your total cost was $10, then you should divide that into 0.35 and the outcome would be $28.58, however if you should (out of the goodness of your heart)  go any lower, then you would know your limits.

It depends on how good they thought it was!  ;D

My nearest BBQ joint charges $10.99/lb for pulled pork. Mine is way better, at least that's what people who have had both say.

I would not have a problem with $12.00/lb or higher.

For me to do it accurately, I would have to weigh it before and after...

Careful though... what is fun as a hobby can lose its sparkle when it becomes work!

The BBQ joint down the street from our office charges $14.50lb. for brisket. I would do some checking to see what places around you charge.

Kind of tough to decide on what to charge for something like that. Can't always just go by what the local places are charging since their costs to produce a lb. of brisket is probably lower than what yours would be since they probably get better pricing on their meats by buying in bulk.

Just make sure you make it worth your time. Must be some GOOD brisket if your getting requests down in Texas :)

KISS Principle (Keep it Simple Stupid)

Your Cost plus 25% (5% for equipment usage and 20% for You)

$25 Brisket would be $31.25

40% would be $35

If your just doing it for beer drinking money then you could always do cost plus $20

ohoh and what weight is ruling ? the precook weight or the real thing....
could be a difference of 40-50% in weight after cooking. be careful on that
