My daughter-in-law is having an office party Wed. She asked me last night if I could smoke something for her....Silly question! ;D So broke out another brisket, rubbed it down and rested overnight in the fridge.

I keep at least 1 (already smoked) Pork butt in the freezer for just such an occasion!
I'd be interesting in hearing the times/temps you put these in (and when the actually finish), knowing that you had to leave for work. I'd love to be able to do something during the week while I am at the office.

The follow up from last night and this morning. Brisket and roast after 6 hours in the smoker.

IT of roast was right at 130, then thrown into stockpot with beef broth to braise for a couple hours. Brisket into the oven at 200 for an overnighter.

Yeah...I still can't bring myself to leave the OBS unattended, even if its just for the afternoon while I'm at work!
