Title: My Itty Bitty Pork Roast

Ok, I confess, I have never smoked a pork roast or pork butt before.
The only reason for this is that my dear husband has me running scared :D
He's afraid I'll ruin it by making it too smokey, too spicey or too "barky"
But after seeing so many beautiful butts on this forum I finally gathered enough courage and smoked a little 5lb picnic pork roast this weekend.
I used this recipe with the Willingham's Rub because I hoped with it not containing any sugar that it would not get a dark bark on it.

Smoked with 3 hours of Maple.  Cooked in the OBS at 210-220F for about 10 hours to reach 190F IT.
Let it rest wrapped in foil for 2 hrs and it came out great!  My hubby even loved it!

Carolyn, neither are my eyes!  So your pics and my eyes match up well  ;D  The pork looks delicious.  Wish I had some.  Glad the hubby liked it - that is important!  Job well done!

Good looking butt you got there. Congratulations on getting that monkey off your back. I am in the same situation but only with brisket. Have not had a chance to do one.

I've never been able to ruin a pork butt. I have tried many times. The family (and wife) still makes it disappear!

No such thing as too spicy or barky around here!  :P ;D

I saw some little 'picnic roasts' at the store the other day... 2-3 pounds each.   Will have to try one out.

Did you slice it up, or did it 'pull' like PButt?

We ended up slicing it up and it was really moist and tender :)
I made a pizza last, night using the leftovers, by splitting a loaf of French bread, spreading a thin layer of Ragu's garlic alfredo sause, topped it with sliced tomatoes, sliced, green onion, pulled pieces of the roast and shredded Italian cheese blend.  Under the broiler for 5 mins and it was yummy! ;D

I have to agree with everyone else, NICE BUTT there Carolyn.  ;) :)

You do not have to use a rub at all, just S&P garlic and what ever others spices you like.
It looks delish as you have it.

Wow!  I haven't had anyone tell me I have a nice butt in 20 years, let alone an itty bitty one!:D
I'm gonna have to smoke more of these to boost my self esteem! :D

about 25 years ago while shopping at Winn - Dixie in Cocoa FL with my friend and his wife, we came accross this beautifull lady with 3 children. She had the nicest butt I have ever seen. I confided the info to my friend only to have him challange me to tell the lady about my thoughts.  Not wanting to think of myself less than what I have already built up, I waked straight up to her and I said:" please do not take me wrong, but I think you have the nicest deriere I have ever seen.
To my syrprise, she said:" thank you very much, that is about the nicest thing anyone has ever said to me in a long time".

Go figure
