Plan to smoke a brisket for the first time this weekend. Plan to cook to an internal temp. of 180 - 185 then FTC for 2 hours. Should the towel be wet or dry?

Definitely dry.  It is there for insulation.  I usually do a sftc.  That is saran added to the equation...optional, of course!
