Title: pick a peck of peppers

hey guys its been a while hope everyone has been good.

ok question i have a garden full and i mean full of peppers    hot, sweet.    i am thinking that before if freeze them maybe i should smoke them,       they will be used mostly for salsa and in mexican cooking.

let me know what ya all think

could always smoke and dehydrate and grind into powder and mix and match to make your own special blend.

I smoke and dehydrate many kinds of peppers. But I will also if there is room in the smoker. Rough chop onions and peppers and smoke for an hour or two, they will get slightly soft. allow to cool then vac pack for chili or something else later on. I have never had a problem doing this and the little smoke is enough to perk up an ordinary dish.
