We bought some Lox in a small store in Sydney BC this morning.....brined, cold smoked Sockeye "belly meat"....the best I have ever tasted..
"Belly meat" is fatty and a little stronger flavored than fillet.....will experement with it as soon as I get home.
We have a local Viet Nam store that sells the belle meat....actually cheaper than fillets...
