Title: Pulled Pork

I have about 23 lbs I will be smoking tomorrow I was wondering if I can leave it sit out for 4 hrs tomorrow to get it to room temp before I start smoking it at 11:00 on friday. Problem is I wont be back till 11:00 and the wife leaves at 7:30 is this okay to do?

Is that a one pork butt or several?

If the latter, I dont think that you need that many hours. a couple, or less, should do the trick as long as there are no pets around.

I would think if you wrap each but in a towel and keep out of the sun or any other heat source it would slow down the warming, or in a cooler with out ice might work

OU has you going staright.....Foil and towel should retard the cooling time. I won't be afraid to do it.

Four hours is a long time. A cooler would probably do the trick.

Or just put them in there cold. It will take longer to smoke, but that's not the end of the world.

Well its in the smoker came home early from work to pull out to get it to room temp. I am thinking its going to be in that 18 to 20 hr range cant wait.(http://)(//)
