Title: NE PA Cheese Day

It like 61* now so i am doing 7 blocks of cheese.

4 sharp cheddar
2 pepper jack
1 swiss.

Using Alder today 2 hrs.

do you get your cheese from the grocery store or butcher? Is there a special kind of cheese needed for this?

I just get the cheese from the store. any will work but i found the Cabot is better

Cabot's white cheddar........mmmmmmmmmhhhhhhmmmmmmm.  I buy it at Sam's Club in 2 pound bricks.  Folks will line up at my door if they know I'm smoking cheese.

I am going to try my Lil'Tex on a few with my 180LV controller. Carnie1 found lil'tex for $499 today at key aid ace hardware in ephrata, pa. Dont know if he got it.

I'm on day 9 waiting for mine.  MAYBE I'll try one tomorrow.  The waiting is difficult.  Can you imagine what it's like waiting for many YEARS for balsamic vinegar?

Deb i gotta get away from my Keurig  ;D  so i can get to the store and get some aged cabot cheddar.

How do you like that Keurig, nepas?   I've seen them around, but never heard from an actual owner.

I like it, went thru a box of caribu coffee already.  So far way better than my Tassimo brewer was.

I'm on my second brewer.  The first one died this summer after being used almost every day for 4 1/2 years. 

Habs & Smokin Soon have one also.

I wouldn't ever go back to a regular coffee maker.

I've had coffee from one at a friend's house and found I had to make a small cup of coffee to get the strength I like.  The coffee seemed pretty weak at the mug size.  But, the cleanup is great - there isn't any.

I use a DeLonghi espresso/coffee machine.  Set how fine you want the beans ground, the amount of water and the coffee dosage.  I can make it the way I like it.
