Hanging from 5 to 6lbs, inverted racks 8 around the same.

Do they need to hang or can you put them lying on the racks? I have read they should not be touching each other.

Fair-chase

I have made & smoked 10 lb batches and got them all in my 4 rack unit. I do hang mine though. You can use the racks if you choose. You can also use the inverted rack trick to double your capacity. The only thing with using the racks is you will leave marks on the product itself. You do need to leave space between them. Here is a picture of how I hang my sausage in the 4 rack unit.
