Well the smoker got here this am via UPS. 

Didn't take much to get the smoker assembled on the back deck.  Now where are the briquettes? The smoker doesn't come with any!  OK, got those on order and coming priority mail.  Now who in KC has briquettes?  Cabelas assured me they "had plenty".  They did... of mesquite, mesquite, and did I mention mesquite.  OK, native Texan here anyway so I was braced.

Marainted the dove breasts in my magic Terlingua Special dove marinade while the smoker was getting seasoned... once that was done, cinch 'er up boys and open the gate.  Here we go!

Wrapped them in peppered bacon and set the smoker for 1 hour smoke and 3 hrs cooking at 180.  Put them over a charcoal fire for 3 minutres of so to crisp the bacon.

Oh My!!!!   Knocked a couple of dozen of them back with an ice cold Lone Star or two.  Doesn't get a whole lot better and first time out....  Can't wait till tomorrow night.

WHATTTTTTTT ??? no pics? geez, how do we know you did the dove breast? how do we know you drank a Lone Star or two... PICS, that how we know.
Just kidding...Glad you had a great first smoke...Are you a Texan? Duh, mesquite and lone star. what part of texas?   CRG

Great job Toad!
I love dove wrapped in bacon and I bet it was really great smoked, too.

Congrats Toad.  Sounds good and you know we all like pics.

BRADLEY, HERE THIS.  Ship the danged thing with a bisquette assortment.  I had the same problem.  Got the OBS via UPS really quick.  The USPS was shipping the bisquettes all over the country.  That's kinda like "Here's your new car.  There's no gas or oil in it.  Enjoy."

MMMMMM!  Bacon wrapped smoked dove breasts.  They are so good.  For a twist take a water chestnut slice and place on the breast before wrapping with the bacon.  If you're doing the whole breast, place one slice on each breast half before wrapping.

Yum.

Ran out of bacon and had a few left over, so here was the fix....

On a cocktail toothpick, skewer a breast, add a piece of roasted red pepper ( from the store packed in olive oil ), then a quartered artichoke heart, and top it off with a fresh basil leaf.  That's all there is to it.  Quick to make, easy, and by the look of the consumers - very tasty.  You could just as easily put a medallion of smoked sausage or a shrimp instead of the dove.  Heck, substitute anything that somes out of the smoker.  Don't think you can go far wrong.
