Title: Some rib advice needed
Post by: Chaostrophy on October 02, 2009, 09:47:41 AM
The main heating element on my OBS is busted. Bradley is sending another in the mail. The problem is I have been planning to cook for friends on saturday and already bought the ribs. Can I smoke the ribs today using only the heat from the smoke generator? This would bring the temp to about 125 F. I plan to smoke them for 3 hours, wrap and refrigerate until tomorrow when i will boat them and cook them in the oven for 2 more hrs at 250 F, unwrap, sauce and cook for another hour (basically the 10.5 method) Will this work? My big concern is the low temp for the smoking.

Thanks,
Greg
