My wife had some boneless, skinless breasts thawed for dinner - boring.
Then, I remembered this post http://forum.bradleysmoker.com/index.php?topic=11819.0 by Gamefish. I didn't have the ingredients to duplicate it but it provided inspiration. ;)
Recipe of sorts:
- 3 medium size boneless skinless chicken breast halves
- 6 unripe Thai peppers - mine simply refuse to turn red
- Goat cheese
- Bacon at room temp (it was 62 inside at the time)
Cut each breast half in half lengthwise. Carefully cut a pocket for stuffing in each.
Blanch the Thai peppers for about a minute.
Begin the assembly process by sprinkling a little of your favorite rub or seasonings on the chicken.

Put one pepper and a smear of goat cheese into each stuffing pocket.

Wrap the chicken one or two slices of bacon, as required. Neatness doesn't count.

Hot smoked with one hour of Oak. Continue to cook for an IT of 160 and the bacon is done.
Served with some steamed zucchini and fresh tomatoes. My wife couldn't wait.

Finally, dinner. You can't really see the pepper but believe me, it's there!

This is sorta like (stretching it) an inside-out ABT. Yes, they were good. And, it was something different to do with the chicken.

You might want to try it with a jalapeno, cut into quarters length-wise with the seeds and ribs well cleaned out. That shouldn't be too hot, but you never know. My wife had two of these last night and the second one was really hot. Of course, both of the peppers were growing right next to each other on the same plant.

Nope. The goat cheese doesn't really melt - much.

Don't know how I missed this today but that looks great. What did the goat cheese bring to the plate? Did it melt out?

CRG - The goat cheese adds flavor and texture and doesn't readily melt.
Monty - I kind of think the peppers hadn't hit their peak heat yet because they weren't ripe yet.
I got my Giant Bhut Jolokia seeds so I'll be going for some heat next year. ;D

Be sure to protect the plants from squirrels. The second round of Bhut's on my plants have disappeared also!
CS, did the tree rats just eat the peppers? I had heard that putting cayenne in with the bird seed would keep the critters away from the bird feeder because they don't like hot stuff.
