Making some smoked Landjaeger today for this weeks trip. Dont have time for the dry cure #2 type or waiting for the RH%

Here is my mix.

All mixed and let it sit for 2 hrs.

Notice the color change after sitting.

I am having a LPG regulator issue with my smokehouse so i cut them and racked em. Going in at 140* for an hour then bumped to 160* with cold hickory smoke.

Mmmmm Landjaeger.

Problems with the LPG regulator, bummer.

Did a spider crawl into the venturi ? I've had that problem b4, this time of year those critters are looking for a place to hide.

Alright Rick where did you find a landjaeger recipe that didn't use cure #2?

Ahhhh Chris

That falls under the big "YS"  or "SR" catagorys. Which means You Suck or Secret Receipt  ;D  :D

Uh oh Chris.  We may have pushed "YS" a little too far. 

In all fairness NePaS, 10.5 only said it twice.  I'm the guy who went for the third time so answer his question and I promise I won't look at your answer. ;)

You do the flatten after stuffing but i didnt want to this time. I used to have some Landjaeger boards but i cant find em.

hey Nepas!!

It looks great, when I make it I do not get the pretty red color in the casings, are you using colored casings?

Hey Tim

I use clear collagen caseings from PS Seasonings. This company does all the packaging of the Cabelas bulk packs. I use a 1 T of hungarian paprika to every 2lbs of meat.

Do you know if the Landjaeger seasoning from PS Seasonings and Cabelas have the same ingredients?  I know the one from Cabelas is a complete kit and $24.99 but the the PS one is only 6.99, you just have to get your casings.  Also if you have tried the PS Seasonings Landjaeger spices have you tried the regular one and the Grandpa's one, if so which one is better?

Your right SIA

24 with casings but both are the same mix.

I like both the Landjaeger mixes from PS. To choose i would say the PS is better than gramps.
