Title: Spicy Deer Jerky

Tabatha told me this weekend that they were going to have Nebraska days at school this Thur. and she valentered to bring some thing from the land.
So I made up some spicy deer jerky from ground deer.
8 lb sliced and ready to grind.

The cure mixed in 8 oz distilled water

The spices mixed in with the cure

After the first grind with the spices added

After 6 hr at 150 F

Ready to go to school, I think 3 lb should be enough.

Tonight its going to be whole muscle deer teriyaki.

One of these days I have got to try to make it. Jerky is my son favorite snack.

For this batch I used Backwoods Hot and Backwoods Hickory (mixed 50/50) jerky seasoning from LEM, then added some ground celery flakes. I have found the LEM seasonings to have the best flavor so far. The girls think the Hot is to hot so I cut it with the Hickory, tastes great but the celery gives it that special flavor that know one can place.
