Question:
Butts and Brisket Once in the smoker, do you turn the meat over on the racks ?
Option 1: No
Option 2: Yes
When using multiple racks, they should be rotated top to bottom and front to back.
But do you flip / turn the meat on the racks ?
I do not flip the meat over. If doing more than one I go top to bottom. Sometimes I will rotate the rack so that the other end gets more heat.
Same as wildcat. rotate racks bottom to top, and occasionally turn from back to front.
I couldn't submit a vote because the answer is "sometimes". I did a brisket with the flat on the bottom and the tip on top. I didn't flip or rotate. The flat came out a bit burned and crusty on the bottom. I probably should have rotated but not flipped (keep the fat cap on top).
So, I guess it kinda depends on what you're smoking and how loaded the smoker is. I have an OBS 4 rack. If all racks were full, I'd probably rotate top to bottom and front to back. For Lighter loads, I normally don't bother with it. It lets the heat out.
I will rotate racks, but never flip/turn the meat!

When using the 2 top racks for butts, sometimes I do nothing. It's all good.

CRG - I think you've pretty much flipped out already.
Carolyn - For me it depends on the food. I'll always keep the fat/skin on top. And, go to bed and get some rest so you'll feel better. Adult beverages probably won't help cure you but when you get numb - well - it doesn't hurt so much. I have arthritis and I'm trying to kill it from the inside.
Only when I'm using all racks and the bottom is occupied - the bottom can get overdone since so close to the element.

Exactly the same. No flip flop, or rotate. My reason is one end will come out at like well done which my wife likes better then medium which I like. If I rotate it, it's the same all over. If it wind up well done all over I suffer and don't enjoy it and vice-versa the other way.
When doing brisket or butt I dont flip or rotate when only doing 2 or 3 racks.
When I have 4 to 6 racks in there then I will rotate and move top to bottom.
I dont flip anything.
