Title: GB Jerky

I am getting ready to make my first batch of 85/15 GB jerky. I am going to use the HM spice kit since I already have it and I want to use it up. It says in the directions to let the GB cure 24 hours in fridge. Is this necessary and if it is do I put it through my jerky gun first on to the screens or can it be in bulk and then how well does it go through the gun the next day?

If you're referring the Hi Mountain kits, I've used them and they're good.   The reason to leave it in the fridge for 24 hrs is to give the cure a chance to work.   Leave it covered and put it through your jerky gun after the curing process.

Done a ton of this stuff.  Best suggestion I can give you is to let your bulk GB come up in temp a little bit before trying to shoot it through the gun.  The warmer it is, the easier it goes through the shooter.
