Decided I had to try the new DBS on some jerky.    Took a hind quarter of deer out of the freezer a couple of days ago and let it thaw in the fridge.   Today I sliced it and spiced it ;).   I like to use the Hi Mountain spices/cure.   Never fails.    In the past I've used the dehydrator and added some liquid smoke.   None needed this time since it's going in the smoker.    Will try the Crown Royal pucks.    Unfortunates have to wait until this time tomorrow to put it on.    Can't wait to try the finished product.

It turned out real good IMO ;).   After I pre heated the smokers and the generator I put in enough pucks for a couple of hours.   Smoked at 190.   When time was up, I tested and it's wasn't quite done.   Started everything up again for another couple of hours.   Took it off and tested.   Some were drier than other pieces.  Some were more moist.   I put all of it into a zip lock bag and left overnight.   Seems the drier pieces absorbed some moisture from the wetter one and wetter ones dried.   It's all nice an even now.   I've had the same experience with jerky done in a dehydrator.
I used the Crown Royal pucks and it's not bad.   Used to use maple in a different dehydrator and liked that too.
