Anyone have a recipe for summer sausage without additives/cures/msg etc.?

I dont think you can make summer sausage without additives or cures, at least I have never seen a recipe without some kind of it in there.

I dont put MSG in anything.

Yeah, that's what I'm finding out.  What did they do 100 years ago for cryin' out loud!
