This is how I do most of my jerky.
Most of the time I don't smoke it.
Start with some eye round:

Trimmed of surface fat:
Cut in half the long way with the grain
(http://i276.photobucket.com/albums/kk7/flbentrider/bradley/DSCN4582.jpg)
Into the freezer for three hours.
More to come.
I'll be watching!
Those are gorgeous cuts of beef :)
Carolyn
Dang, that's a good price... I need to run to Sam's on Monday..
Smoked roast beef sammies for all my friends!
After three hours in the freezer, used this:

to make this:
We separate the meat into 3 pound batches, it is easier than trying to tackle 11 pounds at once.
this is the cure we use:
Lay it out, apply cure and pepper to one side:
I use this to apply the pepper:
Flip each piece over, apply cure, pepper and garlic powder to the other side.
Place in a zip-top bag and refrigerate for at least 24 hours, I usually do 48 hours.

Maybe Santa will get one for you 10.5! ;)
Carolyn
FLBR, love the power pepper grinder. That jerky looks awesome. Have 9 pounds of ground meat jerky going tomorrow.
Your slicer looks amazingly just like mine and 10.5, you may get one but not for the price FLBR, me and several others did. As far as I'm concerned that has been the ultimate score since I've been on this forum. :o ;D 8)
KyNola
Dang. I love using power tools in my cooking. More details please. And what slicer is that?
The slicer is built by Weston. They made a bunch for Cabela's and had to recall them because they had a circuit breaker type deal in them that would "pop" at 20 minutes. They replaced the circuit breaker and sold them online. If I remember correctly, the 10 inch slicer like I have was $80.00 and the 12 inch was $100. By the time I got to their website all of the 12 inchers were gone but the 10 inch works just fine.
Like I said earlier, best score since I've been on board except for all the free stuff NePaS has scored lately. :D
KyNola
I got in on the Slicer deal. It think it was around $100.00 with freight.
The Pepper grinder - I just took the top off, chucked the shaft in and away we go.
It helped that the "mate" to that pepper grinder was no longer in service, so that was an orphan.
The BPS for $92.50 is on that list as well.
That's going to be some fine jerky FLBR. Was at my brothers yesterday to pick up his juicer and he was making some jerky. We got a real good deal(for up here) on eye of rounds at $2 a pound, so I bought 4. I called him from the store to tell him they had about 10 left and I think he went to buy them all. He makes awesome jerky like you. Of course my last batch was a flop, note to self "don't fall a sleep on the couch when making jerky".
Waw great meat and great tools.

Can't wait to see the finished product. Black Angus beef jerky.
I was going to put it in the dehydrator this morning, but it didn't happen.
Probably get to it this afternoon or tomorrow morning.
Looking good
Is it done yet?

FBR, that is some fantastic looking jerky and you made it look so easy.

I have, but it's kind of a pain to move the jerky from the fridge to the bradley to the dehydrator. I end up knocking off a lot of the pepper handling it so much.
FLB. looks great..........
seemore
OMG!!!!
Note to self - buy that dehydrator now! Sell the cat if I have to!
That looks mighty tasty FLB
Havent made any Beef jerky for so long I kinda forgot what it tastes like, been doing jerky with deer for ever.
Its all good.
You've gotta take them pictures off, everytime I read this section I have to break out my jerky. I'm running on empty in the jerky dept now, (and getting fat). Good looking stuff!
Great looking and I'm sure tasting jerky there FLBR! :)
FLBR,
That is some fine looking jerky my friend.
I bought a jerky cannon today! WOOHOO! That's the end of me freezing the ground meat and then slicing before going in the dehydrator although that method is absolutely great but this last batch I screwed up(imagine that)and left it in the deep freeze for over a day and my slicer labored to get through it at first.
KyNola
Good for you KyNola
Your going to love your new tool, its easer to clean than the slicer, less likley to loose a finger also. ;D
I went to Sam's today and looking thru the meat market I saw 3 eye of rounds and all I could see after that was FBR's jerky.
Some mighty fine looking jerky.
FLBR!
That jerky came out fantastic!
What's prettier than all that jerky stuffed in a big jar?
I can't think of anything either :D

My hand in that jar.
I should have brought some jerky with me on this trip. My kids will probably have it vacuumed up by the time I get back.
We make that much every other week or so!
Quite an interesting topic ! I'm gonna jump on this as soon as my Cabela's slicer & cure order arrives ;D
