Title: Double Smoked Bacon
Post by: Irish49 on November 11, 2009, 08:26:29 AM
Have already cold smoked cured bacon but want to double smoke, is this just a process of putting the smoked bacon back in the smoker? Does it need any more rub? Or do I just smoke the bacon for twice the time it takes regular cured?

I'm not sure about double smoked bacon but here is the link to triple smoked bacon from the recipe site that might be of some help to you.

I just want to add, when you double smoke or triple smoke bacon the drying periods are very important. By removing moisture from the bacon it really concentrates the flavors.
