Title: Freeze before Smoking?
Post by: Klondikesmoker on November 14, 2009, 08:02:55 PM
Still trying to put the equipment together for doing sausage.  Obviously a Bradley smoker but I am trying to defer the cost of the grinder and stuffer for a year.  I have access to both stuffer and grinder but the stuffer is a 30lb that I have to rent by the day.

I have 150lb of sausage to do.  Is it safe to prepare and stuff the sausage then FREEZE it until I can get to smoking it?   Looking at doing garlic, salami and lots of sticks.

Never tried it but don't see why it won't work.

Not 100% but I think I have seen a post where Tenpoint5 mentioned it can be freezed up to few months before smoking.
