Title: Goose Breasts

A hunter friend just gave me a big bag of frozen Okanogan Valley (WA) goose breasts.  That give anybody any ideas?   ???

marinade, bacon wrapped and smoked, quick hi temp grill on them.  yummm.

I'm with Giz on that one. Sounds like a good plan. My dad was quite the duck hunter when I was little. My mom use to make orange duck. I loved it but I can't remember what she did. How about smoke them for an hour or 2 and then bake them with a orange marmalade and orange brandy glaze. I have never done it but that is what comes to my mind. I may be way off on this, but the good thing about the forum is if I am someone will show me the error of my ways. ;) ;) ;)

Half of them I think are going to end up as goose proscuitto (Morton TQ cure and air dry), and the other half are going to end up in the smoker one way or another.  So maybe cold smoking, just because I can, and then into the kitchen, bacon sounds like a plan!

Don't mind eating them, just don't like cleaning them.
