W E L C O M E  to the Forum Ninjak!

I would put some Jan's rub on it - http://www.susanminor.org/forums/showthread.php?p=718#post718

and smoke it @ 225F with your favorite smoke (I like Hickory on Turkey) for say 2 hours of smoke and continue to cook @225F until the Internal Temperature of the meat is 165F

Make sure when smoking poultry that you have the top vent fully OPEN.

Make sure you season the smoker first - http://www.susanminor.org/forums/showpost.php?p=760&postcount=3

No worries AL, I do a turkey roast like that twice a month (sometimes more) and they turn out great.   The skin won't be very good, but I usually just toss it anyway.

Here are a few threads on how I have done those small roasts - both from BBall and HoneySuckle White, as well as buttermilk brined Turkey legs:

AL,
Welcome aboard buddy.

I've used Jan's Rub on poultry before.  I like it.  The beauty of it is you can liberally apply it just before you put your turkey in the smoker.

Enjoy and have fun with us.

Cousin Arnie Do you know what white cranberry juice feels like coming out your nose. I don't suggest trying it.

I don't fully understand your reply cousin Q.  But, I'll heed your advice and take it off the Thanksgiving menu.  We only have red cranberries down here anyway.

We've all been in the same boat.  Got the Bradley shipped, but the Bisquettes were nowhere to be found..

I found a farm store about 50 miles away that had them.  I get them from Amazon.com now. (buy 3, get 4th free)

That's interesting, I couldn't find them at yardandpool.com. I recently bought the maverick and was going to buy some more bisquettes to get the price up, but couldn't find them there. I ended up buying two mavericks.

I have. Tastes like Oak, with a very subtle hint of Jim Beam.

And for whatever reason, they don't seem to burn as completely as other flavors.

Ninjak,
Assuming you are talking about the "bubba" pucks used to kick your last smoking bisquette into the water, you can do the following.  Let's assume a one hour smoke time.  Place 3 wood pucks in the tube.  Now place your 2 bubba pucks on top of your 3 wood pucks in the tube.  Place one more wood puck on top of the bubba pucks in the tube.  Set your smoker timer for 1 hour and 20 minutes.  The extra 20 minutes is to make the smoker move that last smoking puck off the heat source and into the water pan.  The smoker will then shut itself off and your bubba pucks will be sitting on the heat source with that last wood puck behind them so you can retrieve that wood puck and use again next time.

One other thing I failed to mention, if you set the pucks in there like I described earlier but want the puck burner to remain on as an additional heat source for the cooking period, just set the smoker timer to the same time as the oven timer.  It takes 3 pucks on the slider with a fourth coming down to push the puck off the burner.  With just three on the slide, it will never kick the first bubba puck off although it will continue to cycle every 20 minutes.  Make sense?

And yes, you are gonna love that smoker. ;)

At least 2 bubba pucks, you can get away with two if you follow one the last one with a bisquette.
