Well,

With the new 6, a PID (Maverick ET73 on the way) Auber (strongly considering, hopefully wife isn't checking the bank statements this month ;D) and how would bricks come into play.

:o I haven't seen type of brick listed wrapped under tin foil

::) Location of bricks / How many

;) Needed if using Maverick and/or Auber

The bricks are used as a heat mass so that when you put the cool meat into the tower the heat from the bricks helps to bring your tower temp back up a lot quicker. You can get 2 bricks from the hardware store for about 50 cents each and then just wrap them in tinfoil. Put one in the bottom of the tower opposit the smoke generator and the other one where ever you can, on the v-tray if you don't have something to drippy or on the first rack from the bottom so it is close to the heating element.

I keep two plain ole foil wrapped bricks on the bottom-most rack (OBS) running front to back the long way..  I lean 'em at about a 45 degree angle from the cabinet walls.  I'm theorizing any drippings will run down the bricks into the 'V' tray.  So far, so good.  And yes, the mass does help the recovery time.  I've also preheated them in the oven to reduce the OBS preheat time.

Edit:  They're still not tender.  ;D

Maybe you need to use the Jaccard on them, it might help!   ;)
