Title: Sausage Casing
Post by: oakville smoker on November 30, 2009, 09:45:31 AM
Newbie question here as I get closer and closer to losing my "sausage" virginity

I have the grinder. I have the stuffer.  I have 60 pounds of pork butt.  I am waiting for chuck roast to go on sale for the beef component
I have hog casings.  And I am stuck now ....   LOL

So I have hog casings.  I want to make sausage, peperroni, maybe cooked salami and snack sticks.  Will hog casings work for all
those types or do I need something beside hog casing?  I have read comments here about people only using hog casings but maybe
they only make one kind of sausage or salami or whatever?

Any help is appreciated.  Now  that they closed the golf course, this should be an upcoming weekend project this weekend.  Can't play golf so I might as well cook.

Thanks and happy stuffing !

OS,
For the Snack sticks I would recommend using 19mm collagen casings. For summer sausage I would go with 2.5 - 3 inch fibrous casings. I know some order from butcher packer and some order from the sausage maker. Myself I go to local locker plants and get mine.

Hog casings will work for anything you want.

IMO they might be a little big for the snack sticks, it would make them snack logs.  ;D If you want to stay with natural casings go with sheep.

Salami I like a 3 1/2" casing just for the appearance and you dont have to cut so many little pieces to make a sammi.

The rest, the hog casings will work great.

Just throwing this out there, every thing you want to make will be just fine in the hog casings.

Good luck, let us know how every thing turns out.

Thanks much
I will have to get some smaller casings, should be placing an order today
Snack logs just don't sound too appetizing....   LOL
They are not the easiest things to find around here so I have to order from other side of the country on the internet
But then I should be good to go

If I get my butt in gear and order them today, I should be making snack sticks by the weekend

I placed an order yesterday for casings and spice mixes for sausage and salami
I bought a snack stix kit that I probably paid too much for that includes everything needed to make them including
collagen casings.  28 bucks for all the stuff to make 25 pound of snack stix.  I am doubting I will have them for this weekend but apparently patience is a virtue.  Any body know a web site
I can order some patience from?  LOL
