Title: Canadian Bacon

I'm going to make some.   I should point out that up here we don't call it that.   It's backbacon as opposed to side bacon.   Anyway I have everything I need and will start to cure this afternoon when I get back from hunting.    What I'm wondering or should I say want to confirm is that I can freeze it.   I've got 3 2lb pieces.

It freezes very well.

I slice, vacuum seal, and freeze it just like you would belly bacon. Comes out just as good as you put it in. Did a batch last weekend, mmmmmmmm gooood.

Had some on a pizza for lunch that I vac seal and froze.
Perfect! Nice smoke .... not over powering.

I just froze about 6 pounds of it, freezes great
I pulled a pac out this morning for breakie and was awesome!
No fears freezing this stuff
I am starting another load tomorrow morning so I have lots of inventory over Christmas
The last load, I just cured and then rolled in corn meal, real peameal. 
I prefer that over the smoked

The wife through in one of those frozen cardboard pizzas the other night and as soon as she turned her back I through on a good layer of fresh CB and some smoked mozzarella cheese. She couldnt believe how good this brand of pizza was and dug the wrapper out of the garbage to right down the brand so she would get it again. I sat there biting my lip till she seen the look on my face and said "Ok whats so funny" after I told her what I did to the pizza and watched her get the wrapper she didnt think it was funny. Go figure.  ::)
