I have smoked a pork butt and am looking for a good sauce to go along with the excellent pork. I am looking for a recipe from North Carolina type of sauce. I was there a couple of years ago and it was excellent. I was also wondering if anyone had a good cole slaw recipe to go along with the pork. Thanks.

Habs has a good vaunted vinegar sauce
Vaunted Vinegar Sauce Ingredients:
1 cup Cider Vinegar (I use Nakano Rice Vinegar, Original Flavor)
1 Tbsp. Brown Sugar
1 tsp. Kosher Salt
1/2 tsp. Black pepper, fresh cracked
1/2 tsp. Red Pepper Flakes
Directions:
Place all ingredients in a small sauce pan.
Bring to a boil, and then simmer for 5-10 minutes.
Let cool, and season pork to taste.

I've modified the recipe to use the microwave. If you are making more then the recipe calls for, you will need to microwave a few extra cycles. You can make this into a North Carolina Red Sauce by adding 1/4 cup of ketchup.

I almost forgot. This is a real good coleslaw, but I reduced the mustard, vinegar, mayo and sugar by 50%. I found that was more then enough dressing, and still had to drained some off.

I have made the vaunated vinegar sauce about 4 times and I like more black pepper.

Cole Slaw - I made this up because my daughter is lactose intolerant. It's a little different but went over well.
