I just recieved my original Bradley Smoker as an early Christmas present.  Can't wait to season it and get started!

I think it is good to get use to your smoker as is first, then when you add the PID you know whats going on cause you know all the ins and outs of it. If you are going straight into smoking large amounts of salmon and sausage then you might want to jump right in to a PID, it will just make life so much easier.

Salmon, brisket, pork butts

I would start with the pork butt. It is, IMHO, the most forgiving piece of meat you can put in your smoker.

Then you can move on to Brisket.

I would suggest a remote thermometer like the Maverick ET-73 so you can monitor the meat and smoker temps.

i have already ordered the maverick and some bubba pucks.  Debating on the PID.  Will most likely wait until I try a few things first to determine if I need it.

On butts just plan to make sure you have the time to do it. Give yourself 24 hrs and plan according.

I agree with FLBR regarding the butt and I would also add the salmon to that.
