Question: i have the digital six rack just getting started anyone have a good suggestion on hom long to run the smoke and at what temperatures and hom much to dampen

any step by step ideas for a beginner for summer sausage how long do you run your smoke and at what temps and how much dampening i am trying to shrink the learning curve so i would love any good ideas to eliminate waste

With not knowing what your recipe is. I can only make general assumptions. 1-2 hours smoke. start at 120 for the 2 hours of smoke, bump to 160 - 180 until internal temp is 152-155.

Don't forget to use a cure. I found that out the hard way a few weeks ago. :'(
