I've only had the BSS for a month or so and didn't want to experiment w/ a turkey on Tday, but I did want to use the smoker. I decided to try this:
- 32 oz fresh frozen corn (not in season here)
- one sweet yellow onion diced
- 1 cup thick applewood bacon - cut 1/4" piece (1 cup is after cooking)
- 1/2 cup grated dry parmesan cheese
- 2 tbspn butter
- 2 tbspn flour
- 1/2 cup heavy cream
- approx 2 cups Milk (somewhere between 1-2 cups, forgot to pay attention)
1. slow carmelize the onion
2. cook bacon bits to a point before crispy
3. start a roux using the flour/butter. Slowly add 1 cup milk.
4. (over med heat) add bacon, onions and parm-cheese (and cracked pepper to taste)
5. add cream, then add corn (STILL FROZEN OK)
6. add remaining milk as needed to adjust consistency.
7. Place in shallow pyrex (or similar)
8. smoke at 180ish for 1hr using apple pucks
It was the "it" item out of 7 sides at thanksgiving. I do a lot of potlucks w/ my daughter's preschool and it dawned on me how cheap this is to do (I usually spend a paycheck on those things).
Joe bob briggs would say "check it out".
PS -I searched for something like this on the forum (don't want to dbl-up) but didn't find anything.
neat idea --- question> do you think this would work in a good way if I smoked the freshly picked corn during the season, then shucked and froze in a vacuum sealed bag? Anyone done something similar to that with fresh veggies?
cold smoke right? I bet that would. Actually, then you could do that recipe any time you wanted w/ very little leadtime - brilliant!
