My works xmas party is this Thursday....time to get crack-a-lackin!

Time to rest up for tomorrow, got the jalapenos cored....all 80 of them....pork butt to be shredded and into egg rolls after its cook!  Whew.....time for a beverage!  :D

good lord that's some great looking chow! I am going to have to make some smoked pork egg rolls. I never even thought of that, but now I'll be obsessed with the idea until I make some.

This morning my Sergeant Major asked if I could do some Q for our unit Christmas party, which is freakin tomorrow. Dude doesn't understand how real BBQ works.

I told him I'd have to leave right then on an early lunch to get it done (it was 0930), but I guess it was a priority assignment 'cause he let me go. ran by the store and snagged a butt and a brisket, let 'em warm up some, and had 'em prepped and smoking by 1230. Should be plenty of time to bbq, FTC, pull, slice and go in time for the lunch. Hopefully.

It's just because I've been running a PsyOps mission and bringing in leftovers on Monday mornings.

"Hey, you guys hungry?"

"Nah..."

*microwaves leftover brisket*

Went great!....I work the afternoon shift, so I dropped off the food at around 9:00 and when I rolled back in at 3:00 all that was left was just a little brisket!  Had some happy co-workers!

Just when I thought I was done....daughter-in-law just called and are having a potluck at her work tomorrow could I put something together for her...like egg rolls!  All out of smoked pork, but I've got a couple of sirloin steaks that will smoke up right nice!  So here we go again!  ;D

Sirloins smoked for 1 hr. 20 min. then off to the grill for a quick sear and a rest for a bit

I've got a Euro Pro X, but I rarely use it....Most everything goes in the chicken fryer pan.

OU, FYI.  I have a DeLonghi "Easy Clean" fryer.  It holds about a gallon of oil.  Nothing fancy but works really well.
