Title: soy protein in 80/20 venison / pork snack sticks ?

 Soy protein seems to be a staple in summer sausage . Although in the snack stick recipes I find that about 50% of the recipes call for the use of soy protein or dry milk.

  Just wondering if my 80 / 20 sticks need soy protein ?

Soy protein is just a binder, it wont add flavor to the sticks.

I have use it in some sticks, dry milk will add a small amount of flavor.

Try the milk, you might like it.

Your 80/20 sticks soy or dry milk is up to you. I have often dont 80/20 without either binders.

If you want a little twang try butter milk.

You will have less shrinkage with the binder in there.
