Title: breakfast sausage

Made a couple pounds of bulk breakfast sausage today. It came out pretty good. I did not smoke it but did add a couple tablespoons of liquid smoke.

2 lbs. ground pork
2 tsp. salt
1 tsp dried parsley
1/2 tsp dry rubbed sage
1/2 tsp ground black pepper
1/2 tsp. dried thyme
1/2-3/4 tsp ground cayenne pepper
1/2 tsp Accent
2 Tbls. liquid smoke
5 Tbls. pure maple syrup

Mix and enjoy. The smoke did not really come through as much as expected, kinda got covered up by the maple syrup. I would say if you want the maple than skip the smoke, if you want the smoke, skip the maple. I have seen others use ground coriander but I did not have any to try.
All in all I was pretty happy with the taste and it could not get much easier.

Love pan sausage with Pancakes and the maple sounds like a winner. Thanks Pens.

That is a good recipe, especially for those who do not have a grinder or stuffer.

I have a stuffer but sometimes am just plain lazy!  ;D ;D

I was referring to other members who may not have a stuffer. I believe I've seen a picture of your stuffer, and would love to have it. If I'm correct and my memory is not failing me this morning, it is beautifully designed.

I actually have two stuffers. One is a SS five pounder from Grizzley. The other one is a very old large cast iron stuffer. Man it works great but it take at least two people to run it.

It's the cast iron one that I like.
