Title: help with collagen cases
Post by: Fair-chase on December 20, 2009, 11:47:55 AM
The snack sticks I've made so far have been very good. LEM 19 mm smoked collagen cases are all I've used so far.  I have ended up peeling the cases off of the sticks before eating . When  first biting into the sticks their not bad , but after chewing the casing is kinda like a piece of waxed paper.

Is this a brand issue or just the nature of the beast with collagen cases ?

I had this problem with the LEM 17mm smoked collagen. Now i just use the clear Lem, Cabelas and PS Seasonings collagen.

Thats all I use now as they are easy to get and very user friendly. I find that in fresh sausage they tend to be a little tough but when smoked tou cant  tell they are there. To make them more pliable I use a little cooking oil on them which seems to take out all the wrinkles and easy to work with. Piker
