Hello everyone,
I am wanting to inject a pork butt with marinade this weekend (giggity) ;). I have attempted with chicken but never with pork. Does anyone have tips on which marinade is best and techniques for application?
I have used Italian dressing in the past and it turned out damn good!
Also, do some stab wounds and stick Garlic cloves in the holes.
There are so many ways! ;)
Our blend for injecting-we use a combo of apple juice-garlic powder-mustard powder-soy-& worcestershire sauce. then paint butt with Balsamic Vinegar,apply your rub,cover with plastic wrap & refrigerate overnight.
Inject fat side up in 1 or 2 inch pattern, about 2 cups/butt with a "small injector". Our blend usually is made up of at least 1/2 apple juice & the balance to your taste. Good Luck
Make sure that you inject all liquid or the injector gets plugged up.
I use a butter/apple juice mixture to inject into my pork roasts.

I use the Cajun Injector and Tony Chachere's injectable seasoning and like them.
Like lumpy said, use all the seasoning you can and inject all over.
I know this is not a marinade but I like to take the rub that you put on the out side and grind it into a fine powder then mix it with unsalted butter and inject. Just mix the powdered rub into the butter till you get the flavor you like.
I do pork loin this way all the time.

I use unsalted butter in all my injections, havent used store bought injectable seasonings for a long time.
Ah....getting the rub on the inside is a great idea OU. Is "unsalted" butter different from regular butter?

I use unsalted butter so I dont over do the salt flavor cause all my rubs have salt in them and it tastes almost the same as regular butter.
Cajun Injector's Creole Butter is really good injection marinade. I have used it on Butts and Briskets.

No, but I will now have to start paying for my supply. My cousin would come down and visit my mom from time to time and bring down a few jars every time. I don't know where or why he got them but I was sure not going to turn away the gift horse. He passed away last year so now I don't have a free supply. My biggest regret was not being able to make some for him as he never gave me a heads up when he was coming down.

That was his way of doing for you and you shouldn't feel bad about it.

I have used this same stuff many times and liked it very much. I would recommend the Cajun Injector Creole Butter to anyone who is wanting to try injecting something. I just like to play with making some of my own flavors.
Go for the Creole Butter, if you ha vent allready, you will love it.
I injected my brisket with garlic butter. I havent had much experience with injecting but I am definately going to buy some creole butter. Also mixing butter with rub sounds really good.
For a 10-pound butt, I usually go with about a cup or so of apple cider, a couple of tablespoons of Worchehstehersheshtershire sauce, and a few splashes of Texas Pete. I haven't tried any oil- or fat-based injections; I'll add that to my to-do list.
I'll have to go with a few of the others, I like Cajun Injector's Garlic & Herb injection on my pork butts. No complaints from the family with it. ;D

And you made it yourself. You can halve the recipe.
Creole Butter Recipe
1 can beer of choice
1 pound butter
1 tablespoon of you fav rub
1 tablespoon paprika
1 tablespoon white pepper
1 tablespoon salt
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon dry mustard
1 tablespoon finely ground black pepper
1 teaspoon cayenne - optional
Melt the butter in saucepan and add the beer and spices. Mix well. Let cool, then inject.
Yield: About 2 1/2 cups
Heat Scale: Medium - Omit the cayenne pepper for a milder flavor.

OU, I haven't cause I have about a dozen bottles of Creole injection, Butt I am doing a Butt this weekend and I will.
Infact I'll do two and do one with this and one with a pre-made.
