Title: question about fermento

Hi guys, I just got some fermento from the sausage maker. I'm going to mix up a batch of summer sausage today using the HM kit and I was going to add fermento to it. On the directions for the fermento it says to add ½ oz. per pound of meat. I like a lot of tang to my sausage so I wasn,t sure if the ½oz. was going to be sufficient. This is my first time using fermento so I'm not sure what to do.

You can add more if you like the tang. Does the HM have fermento or lactic acid in it?

Thanks NEPA, I just read the ingredients and neither fermento or latic acid are listed. I'v used the HM kit before and liked it, but it never had any tang to it like I'v noticed in other summer sausages. Thats why I want to add the fermento.

you will be fine with it. Just add the fermento to the liquid so it incorporates into the meat better

Thanks again NEPAS, I wasn,t sure about adding the fermento to the liquid so thanks for the tip. Now its time to go to my butcher to get some meat. :)
