Title: should I cut my brisket in 1/2???

I was just thinking my brisket is 14lbs and I do not think it will fit on 1 rack. Should I cut it in half?? Will it dry out if I do that?? The brisket has a pretty good layer of fat on one side that I was going to leave on to help with the moisture. Also I will cook with the fat end up of course??

you can cut in half.  . sounds like you have a whole untrimed brisket, i would do some trimming, check this out it will help you out, http://www.virtualweberbullet.com/brisketselect.html
