Title: coriander??

I like salt and pepper sausage! What taste  does coriander  add? Any input will help!!

Although I don't like cilantro, coriander seed is one of my favorite herbs. It's a nice citrus flavor to it with some earthy under tones.

That was very interesting and who would have thunk that coriander is the seed from the cilantro plant. I have a big bag of it that my mom gave me and don't know what to do with it. I have never used it. Any Ideas, maybe a rub with it in or something?

My wife told me the same thing years ago. I like the seed taste and can't stand the cilontro taste.

Coriander is fabulous!! Not as pungent as cilantro but will add a good smell and flavor to you meat.

Plant the seeds beside the MJ plants.
That should be an interesting smell when they are both cooking ;)

i have a cookbook around here somewhere that has a recipe
for pork tenderloin with a coriander and garlic crust.
It may take me a day but i will see if i can find it.
If i remember correctly it was pretty tastey.
Something farmhouse cookbook. I will look friday evening.

Thanks guys! I guess ill try it in some  pork sausage saturday! Me and a friend r doing a whole pig!Wow what a busy day it will be!

I once found a coriander sausage recipe that looked great and booked marked. I didn't copy the recipe and I now can't find the link. This has got me thinking about looking for it again.

I couldn't be without cilantro (hooked on Asian food) but I frequently use the seed (freshly ground) in sausages.  Adds a great taste as Habs pointed out.  Have a look at Len Poli's site and you'll find a number of sausage recipes using ground coriander - including breakfast links..

If you have had any of the Central Texas style smoked hot links (aks hot guts)- many have ground coriander in them.  

The only other time I can remember coriander being a big ingredient in sausages is across the big waters and had some bangers that they called  Chilli and Coriander Bangers if I remember correctly.  Quite tasty

I think some Asian style also have coriander.

Coriander is one of those spices that will enhance almost any smoked sausage.  It is one of the prime ingredients in most curry powders, and along with black pepper is what gives pastrami it's distinctive flavour.  Coriander is to pastrami what fennel is to italian sausage.  It also blends very well with cumin in a rub to provide that southwestern or mexican flavour.

Just don't tell us what book you got it from and pretend it is your own. ;D ;D
