You can, but, IMHO, it is not needed and will make the skin even more rubbery.
If you need to stage it, I would pull it out 5 degrees short of your target IT and then pop it in a 350-400F oven right 15 minutes or so before serving until you get to your target IT. That will help the skin and keep you from overcooking the bird.
