Title: Dry-Cured / Hot-Smoked Bacon (Vande Rose)

I've been reading for a couple hours but I'm not finding quite what I'm looking for.  I was curious if anyone had any thoughts on how to make a dry-cured bacon similar to Vande Rose?  I know that they're using some kind of Bruce Aidell's recipe for the cure/spice mixture so it's occurred to me that it might be in his books, but I don't have any of them so that's a moot point at the moment.

Have not had Vende Rose bacon before, but here is a link to a receipe site from the members here with several bacon recipes.
Several (if not all) are dry cured.  
They can be cold smoked or hot smoked depending on your preference (or no smoke even but then ....).

I think this link might help you out some on making your own bacon at home. I have never heard of Vande Rose bacon, but then again I have never heard any complaints about by bacon either. I just got a message from my pressroom mangers wife that it is the best bacon she has ever had. It is worth giving a try.

 I think Vande Rose bacon is just a brand name , follow the links above and you will have the worlds best tasting bacon ! and that's a Bradley Fact !
