Title: Wild Birds?

Hey all! I just bought a new DBS and was wondering if anybody had any good recipes for wild birds such as Ruffed Grosue, Partridge or even Goose. I've made jerky in my old piece of crap smoker, but would like to try new things...Anything would help!

Search the poultry section of this forum and visit the recipe website www.susanminor.org  Tons of great recipes there.  All of them pretty much from Bradley forum members.

Brining is always a good first step.

The addition of a fat layer or drip is usually called into play.  Here is a recent thread which has some ideas.

Welcome to the forum KS.  Keep that vent wide open for poultry in order to get rid of the moisture.
