Title: LEM hot sticks

Hi guys and gals I just finished a batch of LEM hot sticks. I mixed up 4lbs deer with 1lb pork and added 2.5ozs fermento, 1TB spoon ground black pepper and 1t spoon red pepper flakes. They came out fantastic, my wife said they taste just like the pillers brand ones that she used to buy.I smoked them with 1.5 hours of hickery.

Those look great, but I'd lose the whiskers on the ends.  :D

Was the LEM part of a seasoning package that you added fermento, black and red pepper to?

Thanks guys, Gizmo it was a LEM hot stick kit to make 5lbs, then the fermento and the pepper was added extra. I added the fermento to give it a little tang and it worked, but I think I might even add a little more next time to see what happens. ;D

Ya tell me about it, I moved my pics to separate files a wile back and screwed up all the links. Took about an hr to put everything back. I wont do that again
