79 cents a pound this week
How could I say no ????
Picked 2 up this morning

I was thinking about cutting the picnics out them  ( I think that is what makes them New York )
Saving them for another day
Then......
One becomes a present for my new stuffer in the form of salami and pepperoni
And the other becomes a second coppa with the trimmings into the first for salami and pepperoni

Is this an easy one to do or am I setting myself up for a serious challenge here ?
I did manage the coppa seperation quite well a week or so ago

I picked up 2 of them today at the Superstore for .89/lb
Put them in the freezer whole and will have to decide on what to do with them depending on what the advice given here. I want to use the butt half to make pulled pork fro sure.

I spent a couple of hours yesterday cutting these babies up
Such fun ....   LOL  Now I know why I never became a butcher
Stuffer should be here soon and casings will be ordered today
Will be a sausgae making machine this weekend
