Just for the heck of it I tried a pineapple wrapped in bacon. Pineapple cooks really well in TBE, but wanted to see what would happen if I wrapped in bacon. Here is the cook

Here is the glaze 1 cup pineapple juice, 1/2 cup brown sugar, 4 oz's of bourbon, 1 tbs white sugar, a very small pinch of salt.. Let it simmer till thick then glaze away!!

Here is the glaze
1 cup pineapple juice, 4 oz bourbon, 1/2 cup brown sugar, 1 tbs white sugar and a very lite pinch of salt.
Let it cook down til it's thick and use.
Now the pineapple was in TBE for about 25 min's before the glaze was added then 10 min's for the glaze to set.
That's it. Darn good if I say so myself!!

No, but after this I will. This recipe came about because of a thread on the Sizzle forum. Everyone started talking about pineapples and this hit me. I think it's one of my better idea that I have had in awhile.
Like I always say toss something at me and you never know what will become of it. ;D

Now, that is unique! Hmmmmmm I wonder..........smoked pineapple upside down cake. That don't sound bad!
A few things to know about his recipe.
1-- Use thick bacon, the thin stuff will fall off.
2-- Do not make your glaze at the same time the pineapple cooks (you won't finish in time) make it ahead of time.
3-- Don't glaze till your ready to pull it out, sugar burns very fast in infrared!!!
4-- Let it set up a few min's before cutting and serving.
5-- the ends may not cook all the way so cut them off if need be.
6-- Enjoy one of life's true pleasures Bacon and Pineapple!!

Hey Smoke, if it helps I bought my bacon at Publix it was
Wright's brand thick cut bacon. This stuff was thick and easy to use where most thick cut is a little thinner it seems.

I was wonderin how you keep the stuff from fallin off the skewers ?
First off you need to have thick cut bacon and about 10 toothpicks. Wrap the pineapple with a basket weave of bacon as shown and pin the ends with the toothpicks then use a rotisserie spit to hold it together. That's all you need ;D

What your looking at is the kabob holder from Char-Broil made for TBE, now what holds them on is a flat washer at the bottom of the skewer. Char-Broil took a great idea and made a kabob holder but they forgot to add washers to the bottom. Look real close and you can see them. You can get them at any hardware store, just get stainless steel washers and you set. If you need other pictures let me know.

the kabob holders come with cotter key but no washers, I don't know why they there are cotter keys but there are. BTW it does work great!

Look at the "Grill Ring" about 3/4 of the way down the page.
That would help with the end not being cooked. The grill ring would be neat to have and increase the heat to one side for sure, the bacon would have to cook better.
I "fryed 3 chickens yesterday in TBE and man were they good!
I took a chicken beer can holder and cut off the top ring and bent the 3 prongs with about an inch to make 3 feet.
Used my turkey fryer with the beer can holder and it is the perfect height.
All 3 chicken were done at 168* IT. Got them darlings in the zone.

I need to get a turkey holder, the spit rod I have does work great but does not hold large birds very well. Do you have a picture of you holder? I would also think it would hold a pineapple in place right?

The turkey holder might work if it will let a pineapple slide down enough to cook and not rip it apart.

Tommy when I put all this in the BE the top of the Turkey holder is just low enough to let me put the BE lid on.
The top of thechicken rest about an inch or so below the top of the Turkey rack.
And it is very stable in the BE.

Yes, I used a pizza pan when I smoked a loin one time. It did keep the heat in and kept a lot of the smoke in as well. The bad part is it will over cook the skin if left on to long.
NO it will not blow up but it can over heat TBE since the vents one the top are small and won't allow enough heat to escape. With that said, you can try a solid lid but you need to remove it every few mins to see the meat and make sure it's not over heating. For what trouble it is I don't do it any more but I had to try it to find out you know. Where did you get you holder?
I actually Oil fryed a few Turkey's and it came with the deep fryer that I got.
I have seen some almost like them at Academy (Sporting Goods Store) and if I see one I will snatch it.
If you have found one by then, then I will have a spare.
Cool thanks. I did buy a "cheap" fryer but won't use it for anything but corn-boils. The holder that came with it is a rod with a base and would not hold a bird more then 16 lbs if that much. You think buy now I would have one. Altough my spit seems to work really good for certain things a big bird would not work so I do need to get a holder.
