Title: Smoked Chicken and ??? Ravioli

Well the title kinda says it all.  I figure to make a ravioli utilizing smoked chicken.  Trouble is I am looking for the counterpart in the filling.  I had thought mushrooms or something similar.

Here is where I need you.  Please suggest a filling and or sauce. 

Smoked Chicken and ____________  Ravioli with  ______________ sauce.

Lets create this one together.

PS>  I was gonna try some smoked cheese in the sauce but concerned about to much smokiness.

Artichoke bottoms
Creamy lemon sauce

Or

Green chilis
Cream cheese/green chili sauce

or

wine poached winter squash
Creamy wine sauce

or

Artichoke and goat cheese puree
Beurre blanc infused with rosemary

Or the redneck version

Wrap chicken in bacon, smoke till done
Wrap cooked ravioli in almost done bacon,
Smoke for 1 hour
Wrap in foil with a little Jack and steam until warn
Make a beer/whiskey reduction, including chopped green onions, bacon bits, and some CT

All of those sound good.  I thought of like a Parmesan/Reggiano cheese stuffing with a Vodka Marinara sauce?
Or a mushroom/zucchini stuffing with an Alfredo sauce?

Anything you do will be very, very good!

Let us know what you do with that!
